INGREDIENTS
- Package of large Del Pacifico blue shrimp1 lb.
- 1 cup of quinoa
- 2 cups of water
- 1/2 cup of cherrry tomatoes
- 2 tbsp of basil (finely chopped)
- 1 tbsp of mint (finely chopped)
- 1 Garlic clove
- 1/2 Onion
- 1/2 Cucumber
- 1/2 Yellow bell pepper
- 1 Zucchini
- 1/2 Cup of olive oil
- 1/4 cup of Balsamic vinagar
- Salt and pepper
- Iced walter
PREPARATION
- Stir fry quinoa with a little olive oil, when the pot is very hot add the water. Once it boils lower the flame, cover and cook for 10 minutes.
- Turn off the flame and let it sit for other 10 minutes.
- Puff with a fork and cool it down
- Cut the cherry tomatoes in a half and finely chop the rest of the ingredients.
- Sauté onions, garlic and zucchini. Cool down
- Poach the shrimps in boling water for 3 minutes and pass to a bowl with iced water to stop them from cooking. Discard the water and reserve the shrimp.
- Mix all the ingredientes and season with olive oil, balsamic vinegar, salt and pepper.
